Every travel writer dreams of having a byline in a top-tier publication. My chance arrived unexpectedly a few months ago, when a pitch about Bucharest's ever-evolving culinary landscape was approved by NatGeo Travel editors. The article took weeks to research and it connected me with local chefs, restaurant managers, food influencers, and of course, diners. It was difficult to distill everything I learned and squeeze it into 1000 words - many things remained unsaid. Among those, the names of those who took the time to help: Daniel Palici, formerly executive chef at Kané; Cezara Tanase, manager at KAIAMO; Catalina Burlacu, manager at Kané; Izabela Comanescu, food influencer at looking_for_food.ig; Alexandra and Catalin, content creators and food influencers at calatoriisifarfurii; Alex Petricean, executive chef at Noua - Bucatarie Romaneasca; Michelle Altenberg, travel writer and author of the travel blog americanexpatabroad; Roxana Tocu, watercolor artist; Toni, content creator at iubim; Dragos C. and Maria B., Bucharest natives who gave me their perspective as diners. My gratitude goes to all of them, for their time and their insights - this is a story we told together.
